6 sm potatoes
1/2 cup olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon Creole seasoning
OPTIONAL TOPPINGS:
sour cream
grated cheddar cheese
chopped chives
crumbled bacon
Preheat oven to 375. Brush each whole potato lightly with oil and bake for about 45 minutes. Cool. Cut each potato in quarters and scoop out the centers, leaving 1/4" of potato attached to the skin. In a small bowl combine seasonings. Lightly brush interior with oil and sprinkle with seasonings. Re-bake skins at 375 for 15 minutes or longer, until golden brown. Serve with toppings if desired.
